WATERMELON RIND PRESERVES

Ingredients
  • 2 lbs. watermelon rind
  • 2 quts. sugar
  • 2 quts. water
  • 1 lemon, sliced thin
  • juice of half lemon
  • 6 to 8 ginger root
  • 1 c. white Karo Syrup
Instructions
  1. Cook sugar, Karo syrup and watermelon until about done.
  2. Add lemon juice
  3. Tie lemon rind and ginger root in bag
  4. Cook until transparent.
