HOMEMADE ENCHILADAS TEXAS STYLE

Ingredients
  • Sauce
  • 3 Tbs. bacon grease
  • 1½ Tbsp chili powder
  • 1½ Tbsp flour
  • 2 c. water
  • 1 tsp vinegar
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp oregano
  • Filling
  • ¾ c refried beans
  • ¼ lb shredded jack cheese
  • ½ c cottage cheese
  • 1 med onion (chopped)
  • ½ c chopped olives
  • Filling Option 2
  • 1 lb. ground beef crumple in skillet
  • ½ c. chopped onion.
Instructions
  1. Sauce
  2. Make into a paste: bacon grease (or olive oil) with chili powder and flour
  3. Add water, vinegar, garlic powder, salt and oregano.
  4. Heat until it thickens a little.
  5. Filling Option 1
  6. Blend refried beans, jack cheese, cottage cheese, onion, olives.
  7. Filling Option 2
  8. lb. ground beef crumple in skillet
  9. /2 c. chopped onion.
  10. Saute until pink disappears
  11. Dip 8 tortillas in hot grease and drain. Fill tortillas with the filling and put in a baking dish. Pour sauce over top and add more cheese.
  12. Bake at 350 degrees for 20 minutes.
