Cream Cheese Garlic Potatoes

I highly recommend organic food items whenever possible, but you may use what is readily available to you.
Ingredients
  • 8-10 cups boiled potatoes
  • 1 8 oz. pkg cream cheese
  • ½ cup sour cream
  • 1 clove garlic, pressed
  • 1 tsp. salt
  • 1 cube real butter
  • Paprika, chives (for decorating)
Instructions
  1. Wash, peel, cube, and boil potatoes in salted water until they break apart when poked with a fork.. Drain.
  2. Meanwhile, in a bowl, add cream cheese, sour cream, garlic and butter until well blended.
  3. Add potatoes to cheese/cream mixture. Mix until well blended.
  4. Spray a 2 qt. casserole dish with cooking spray and spoon in the potato mixture. Sprinkle top with paprika, chives and a few pats of butter.
  5. Bake at 350 degrees for 20-25 minutes
