Italian Squash (cooked)

Ingredients
  • 3 Tbsp olive oil
  • 1 large onion, chopped
  • 1 bell pepper, seeded and chopped
  • 1 clove garlic, minced
  • 1½ lbs Italian squash
  • ½ can hot tomato sauce
  • ¼ tsp sweet basil
  • ¼ tsp oregano
  • salt and pepper
Instructions
  1. Place olive oil in skillet.
  2. Add onion, bell pepper and garlic.
  3. Saute' until onion is golden brown.
  4. Add Italian squash and cook over low heat about 20 minutes.
  5. Add tomato sauce, basil, oregano and salt and pepper to taste.
  6. Simmer 10 minutes
