Zucchini Squash Casserole

Ingredients
  • 6-8 medium zucchini
  • 2 c shredded cheese
  • ½ c chopped bell pepper
  • ½ c chopped onion
  • 1 c crushed saltine crackers
  • 1 egg
  • ½ c milk
Instructions
  1. Cook squash until crisp and tender in salted water.
  2. Place half of squash in buttered casserole.
  3. Spread with ¼ c peppers, ¼ c onion and ½ c crackers and top with 1 c cheese.
  4. Add remaining squash and repeat vegetables and top with remaining cheese.
  5. Beat egg mixture with milk, pour over top and bake 45-50 minutes in 350 degree oven.
