Zucchini Squash Casserole

- 6-8 medium zucchini
- 2 c shredded cheese
- ½ c chopped bell pepper
- ½ c chopped onion
- 1 c crushed saltine crackers
- 1 egg
- ½ c milk
- Cook squash until crisp and tender in salted water.
- Place half of squash in buttered casserole.
- Spread with ¼ c peppers, ¼ c onion and ½ c crackers and top with 1 c cheese.
- Add remaining squash and repeat vegetables and top with remaining cheese.
- Beat egg mixture with milk, pour over top and bake 45-50 minutes in 350 degree oven.
