Chinese Fried Rice

Ingredients
  • 2 eggs
  • ½ tsp salt
  • Dash of pepper
  • 3 Tbsp butter
  • 2 Tbsp minced onion
  • 1 (5 oz) pkg of precooked rice
  • ½ tsp salt
  • 1½ c water
  • 2 tsp soy sauce
  • ¼ tsp sugar
Instructions
  1. Beat eggs slightly. Add salt and pepper. Melt butter in a large skillet, the flame low. Add egg mixture and fry slowly until firm, turning once. Remove egg from skillet and with sharp knife cut into thin strips, saute' the onion in the butter remaining in the skillet until just tinted brown. Add the rice, other half tsp of salt and the water. Bring quickly to a boil over a high flame. Cover the skillet and take from the heat. Let stand 13 min. Add the egg strips, soy sauce and sugar. Mix lightly but thoroughly. Heat thoroughly and serve at once. Serves 4.
