CHUCK WAGON CHOW

Ingredients
  • 1 lb. ground beef (or chuck shank cut in 1 inch cubes)
  • 2 Tbsp. chili powder
  • 1½ tsp. salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • 2 Tbsp. salad oil
  • 1 c. onions (2 medium sized)
  • 1 chopped green pepper
  • 1 can (1 lb. ) red kidney beans
  • 1 can whole kernel corn
  • (ripe avocado slices)
Instructions
  1. Brown meat slowly in oil with salt, pepper, chili powder in large frying pan.
  2. Add onions and green pepper.
  3. Cook over low heat, stirring often (10 minutes).
  4. If using cubed meat, add juice from beans and corn, simmer 45 minutes or until meat is tender.
  5. If using ground meat, add whole can of beans and corn.
  6. Cook through until hot (10 minutes)
  7. Garnish with avocado slices.
  8. Serve with corn chips and salad.
