FRUIT COCKTAIL SALAD

Ingredients
  • 1 can fruit cocktail, large can (#3, diet)
  • 2 envelopes plain gelatin
  • ¾ c. sugar
  • 3 eggs, separated
  • ¼ c. lemon juice
  • 1 c. fruit juice
  • 1 pt. Emo or sour cream
  • 1 tsp. grated lemon rind
  • ½ tsp. almond extract
  • ½ tsp. salt
Instructions
  1. Drain fruit, reserve 1 c juice.
  2. Heat juice, stir in gelatin until dissolved
  3. Add ½ c sugar and egg yolks
  4. Cook for 3 minutes
  5. Add sour cream or Emo
  6. Add remaining ingredients except fruit
  7. Chill
  8. When thickened add fruit
  9. Beat egg whites with ¼ c. sugar
  10. Stir together
  11. Cool until set
