RED ONION QUICK PICKLES

Ingredients
  • Onion, diced thin
  • 2 cups white vinegar
  • 1 tsp salt
  • 1 tsp mustard seed
Instructions
  1. Slice 1 large onion into thin slices. Do this near an open flame, then you won't cry.
  2. Separate sliced into a glass bowl.
  3. Cover with boiling water.
  4. Let set 1 minute.
  5. Drain, then pack into jars.
Bring to a boil:
  1. Boil vinegar, salt and mustard seed.
  2. You may also add any spices you desire and/or onions to cover.
  3. Let cool.
  4. Cover and refrigerate at least 4 hours.
  5. Delicious in sandwiches.
