SQUASH RELISH
Recipe type: Appetizer
 
Ingredients
  • 10 cups squash (Italian or Zucchini)
  • 4 large onions
  • 5 Tbs. salt
  • 3 cups vinegar
  • 3 cups sugar
  • ¾ tsp celery seed
  • 1½ Tbsp. mustard seed
  • ¾ tsp turmeric
  • 3 medium bell peppers, ground
Instructions
  1. Grind squash, onions and salt.
  2. Let stand overnight.
  3. Rinse in cold water, then drain.
  4. Bring to a boil with remaining ingredients.
  5. Simmer 3 minutes.
  6. Pack in clean sterile jars and seal.
