SQUASH RELISH
- 10 cups squash (Italian or Zucchini)
- 4 large onions
- 5 Tbs. salt
- 3 cups vinegar
- 3 cups sugar
- ¾ tsp celery seed
- 1½ Tbsp. mustard seed
- ¾ tsp turmeric
- 3 medium bell peppers, ground
- Grind squash, onions and salt.
- Let stand overnight.
- Rinse in cold water, then drain.
- Bring to a boil with remaining ingredients.
- Simmer 3 minutes.
- Pack in clean sterile jars and seal.
