WATERMELON RIND PICKLES

Recipe type: Pickling
- 7 lbs. watermelon rind (the outer green part of the watermelon)
- 1 pt. vinegar
- 4 lbs. sugar
- 2 sticks cinnamon
- ¾ oz whole cloves
- 1½ oz. ginger root
- Put spices in a bag.
- Cook sugar and vinegar until dissolved.
- Let cool so spices will infuse.
- Then add rinds and boil till transparent and tender.
