WATERMELON RIND PICKLES

Ingredients
  • 7 lbs. watermelon rind (the outer green part of the watermelon)
  • 1 pt. vinegar
  • 4 lbs. sugar
  • 2 sticks cinnamon
  • ¾ oz whole cloves
  • 1½ oz. ginger root
Instructions
  1. Put spices in a bag.
  2. Cook sugar and vinegar until dissolved.
  3. Let cool so spices will infuse.
  4. Then add rinds and boil till transparent and tender.
