TAMALE PIE

Ingredients
  • Cornmeal Crust:
  • 5 c. cold water
  • 1 tsp. chili powder
  • 2 tsp. salt
  • 2½ cups of cornmeal
  • Filling:
  • 2 Tbsp. shortening
  • 1 lb. ground beef
  • 1 c. chopped green pepper
  • 1 jalapeno
  • 1 c. chopped onion
  • ½ c. chopped celery
  • 1 c. sliced ripe olives
  • 2 c. tomatoes
  • 1 c. cream style corn
  • 1 clove crushed garlic
  • 1 Tbsp chili powder
  • 2 tsp. salt
Instructions
  1. Cornmeal Crust:
  2. Combine water, 1 tsp. chili powder, salt, and cornmeal in a saucepan over medium heat.
  3. Cook until thickened (about 15 minutes), stirring frequently.
  4. Line the bottom and sides of a 2 quart baking dish with ⅔ of corn mixture.
  5. Filling:
  6. Lightly brown:
  7. Shortening, ground beef, onion, green pepper, jalapeno, chopped celery, and olives.
  8. Add:
  9. Tomatoes, corn, garlic, 1 Tbsp. chili powder and salt.
  10. Simmer for 20 minutes,
  11. Pour over crust in baking dish.
  12. Top with remaining crust.
  13. Sprinkle with remaining cheese.
  14. Bake at 350 for 45 minutes.
