GRANDPA'S BEAN SOUP

Ingredients
  • ⅔ Ham hock
  • 1 c. white navy beans
  • 2 quarts water
  • ⅓ c. chopped parsley
  • 2 stalks celery, chopped
  • 4 medium potatoes, cubed
  • 1 large onion or 1 medium
  • 2 green onions
  • 4 large carrots
  • 1 bay leaf
  • 10 peppercorns
  • 1 small hot pepper
Instructions
  1. Cook ham hock until tender
  2. Add navy beans and water
  3. Boil 30 minutes
  4. Add remaining ingredients
  5. Cook until vegetables are tender
  6. Stir in ⅓ to 1 c. sour cream, just enough to suit your taste.
