CRUNCHY CARROT BALLS

Serves: 14 balls
- 1 (3 oz.) pkg cream cheese
- 1 tsp. honey
- ½ c. Grape-Nuts cereal
- ½ c. shredded cheddar cheese
- 1 c. finely shredded carrots
- 2 Tbsp. snipped parsley
- In a bowl, beat cream cheese and cheddar cheese with honey until blended.
- Stir in carrots.
- Cover and chill.
- Shape into 1 inch balls.
- Just before serving, roll balls in mixture of cereal and the parsley
- Press cereal into balls.
