CRUNCHY CARROT BALLS

Serves: 14 balls
 
Ingredients
  • 1 (3 oz.) pkg cream cheese
  • 1 tsp. honey
  • ½ c. Grape-Nuts cereal
  • ½ c. shredded cheddar cheese
  • 1 c. finely shredded carrots
  • 2 Tbsp. snipped parsley
Instructions
  1. In a bowl, beat cream cheese and cheddar cheese with honey until blended.
  2. Stir in carrots.
  3. Cover and chill.
  4. Shape into 1 inch balls.
  5. Just before serving, roll balls in mixture of cereal and the parsley
  6. Press cereal into balls.
