Ingredients
- 1 lb. ground beef (or chuck shank cut in 1 inch cubes)
- 2 Tbsp. chili powder
- 1½ tsp. salt
- ¼ tsp pepper
- 1 clove garlic, minced
- 2 Tbsp. salad oil
- 1 c. onions (2 medium sized)
- 1 chopped green pepper
- 1 can (1 lb. ) red kidney beans
- 1 can whole kernel corn
- (ripe avocado slices)
Instructions
- Brown meat slowly in oil with salt, pepper, chili powder in large frying pan.
- Add onions and green pepper.
- Cook over low heat, stirring often (10 minutes).
- If using cubed meat, add juice from beans and corn, simmer 45 minutes or until meat is tender.
- If using ground meat, add whole can of beans and corn.
- Cook through until hot (10 minutes)
- Garnish with avocado slices.
- Serve with corn chips and salad.
